It is no exaggeration to suggest that Yatir Sauvignon Blanc may be Israel's finest interpretation of this classic grape varietal. From ultra-premium grapes grown in the Ramat Arad vineyard, the wine is made in a Bordeaux style, aged in oak barrels to emphasize rich and lush characters (as opposed to the familiar New World style that never touches oak and emphasizes steely acidity). A beautiful straw color, the wine has mellow citrus aromas accented by notes of melon and white flowers. The flavors explode on the palate - melon and fig with a minerally, toasty finish. While acidity is not the focus, there is plenty of balance that makes this a food-friendly wine that should be paired with your best seafood dishes, wild mushroom soufflÂŽs, or delicate cheeses.
