This wine is made of 100% Sauvignon Blanc grapes from the Ramat Arad vineyard, situated next to the winery, and is the only Yatir wine that is not produced from vineyards in the forest. Following a long, cold fermentation, the wine is aged 3 months in French oak barrels, half of which are new. Straw-colored with a greenish tinge, the aroma of the Yatir Sauvignon Blanc combines tropical fruit, lime, and flowering citrus. Fruity and refreshing.
While acidity is not the focus, there is plenty of balance that makes this a food-friendly wine that should be paired with your best seafood dishes, wild mushroom souffles, or delicate cheeses.
