Shiloh Mosaic 2006

The Shiloh winery began operations in 2005 in a state-of-the art facility overlooking the breathtaking views of the Benjamin strip. Under the direction of master winemaker Amichai Luria, Shiloh's wines have already won an impressive array of national and international awards - establishing the brand as one of the most exciting and promising in Israeli wine. Mosaic is Luria's crowning achievement, a blend of only the finest Merlot (60%), Cabernet Franc (40%), Cabernet Sauvignon (7%), Petit Verdot (7%), and Petite Sirah (6%). The wines are vinified separately, spending a full year in French oak barrels before being blended, at which point the blend is aged in barrel for another six months. The color is deep, almost impenetrable garnet. Aromas of ripe blackberry, cedar and cacao lead into flavors of dark fruit preserves, forest floor and vanilla. Mosaic will be the crowning glory of a dinner featuring prime rib, roast duck or leg of lamb.
