The vineyard at Dovev lies on steep hillsides in a mountainous section of Israel's border with Lebanon. The difficult terrain divides the vineyard into a number of small plots separated from one another by rocky outcroppings. The Merlot used in crafting this fine wine is planted on rocky Dolamatic lime soils. Due to its high elevation, the Merlot of Dovev is among the last grapes to ripen, producing fruit of intense aroma and tannin. The fruit is hand-harvested, and the resultant wine is aged for 15 months in a mixture of French and American oak, yielding notes of chocolate, leather and tea to create a complex bouquet. Though drinkable now, this wine will also cellar well and is a delightful accompaniment to a wide range of dishes.
This is at its best with a rustic country stew, lamb tagine, or aged hard cheese such as Pecorino.
The wine is full bodied with rich rounded tannins and a long finish.
