To create this decadent dessert wine, the winemaking team at Herzog waits until Monterrey County Riesling grapes begin to dry out and "raisinate" on the vine before picking. With a reduced water content, the flavors and sugars are concentrated to a high intensity that carries through to the finished wine. The aromas are classic Riesling: Apricot, peach, and lime. The flavors show similar fruit characteristics, and balance intense acidity with a delectable sweetness. Try serving this with a dish of quality vanilla ice cream, or a deep-dish apple pie.
