Gilgal Cabernet Sauvignon was produced from Cabernet Sauvignon grapes grown in the Golan Heights and Upper Galilee. The cool climate, rocky volcanic soil, and high altitude are ideal conditions for growing this classic variety. Aging in French oak barrels for 12 months adds to the complexity and cellaring potential of this deep red wine.
Try Gilgal Cabernet with a good grilled steak or broiled lamb chops. The wine also goes well with strongly flavored cheeses such as Comté or a well-aged Cheddar.
The 2007 Gilgal Cabernet Sauvignon exhibits notes of blackberry and cherry fruit, with a nice background of oak and hints of herb and spice. The wine is a satisfying, full-bodied Cabernet displaying classic varietal character. While ready to enjoy now, Gilgal Cabernet will age well for some six to eight years from harvest.
