Flam Classico 2011

Sourced from the Mata Vineyard in the heart of the Judean Hills, Flam Classico is a tantalizing Bordeaux-style red blend of 50% Merlot, 42% Cabernet Sauvignon, 5% Cabernet Franc and 3% Petit Verdot. All the fruit is hand-picked in the early morning hours, ensuring it arrives at the winery at the ideal temperature and in perfect condition. A two-day cold soak maximizes the extraction of color and aromatics, which you will see and smell immediately when you pour the first glass. Aromas of spicy raspberry with hints of cocoa lead into flavors of ripe cherry, cedar, and a lush vanilla finish from 10 months of oak aging. It is drinking well now, but will continue to age for 2-5 years. Pair with roast Cornish Hen or mushroom gnocchi.
