Adar Cava of Elvi Wines is elaborated from the wines made from the local grape varieties Perellada, Macabeo, and Xarello. The second fermentation takes place in the bottle following traditional methods. Before disgorging, the wines are aged for 12 months in the bottle.
Serve chilled with smoked Salmon and Caviar.
Bubbly and dry, with interesting floral, mild citrus, and strawberry notes. It is crisp and clean with a moderately long finish.
