The wine is composed of the three black varieties which grow in this vineyard: Shiraz (52%), Merlot (30%) and Cabernet Sauvignon (18%). The different plots were harvested separately, each at the right time, and aged separately in oak barrels for 12 months. At this stage we created the blend and the wine was bottled, without fining and with only mild filtration. A deep, shiny purplish red color. The nose is full of scents of black fruit, mainly cassis, which lead to aromas of tobacco, rosemary, nutmeg and a hint of old leather. The palate presents elegant and balanced fruitiness, refined acidity, a greenish shade of thyme and rosemary wrapped in ground black pepper. The smooth tannins, the complexity, the richness and the long and elegant finish eventually create a wine which is harmonious, precise and yet with an impressive presence. Serve with roast beef or sautéed veal shanks.
